bak kut teh Popular hawker dish. ‘Bak kut teh’ literally means ‘pork rib tea’. This is a dish of pork ribs brewed with herbs, garlic and pepper over a low fire. The result is soft and tender ribs served in a peppery soup. It was traditionally a common breakfast dish that was served with a bowl of steamed rice, you cha kway (dough sticks) and a soy sauce and chilli dip. However, bak kut teh is eaten around the clock these days, and is especially popular as a suppertime dish.
